Living in the Fast Lane.
Cousins Camp: We built fairy houses this week and ate fairy food. Look at the little thatched roof houses the moms, ahem, the girls made. Let's just say that there was A LOT of glue gun involvement which was not suitable for small fingers. We are building a fairy garden on my weeks so we will be making stepping stones and a wishing well next and end our summer camp with a Fairy Tea.
Canning: This week I have made Vidalia Onion and Peach relish (over goat cheese it is to DIE FOR)
Peach Chutney, and this super incredible Peach Salsa that was so pretty that I took a picture of it.
I also put up 10 lbs of tomatoes, and made four batches of homemade whole wheat tortillas and froze them. I also spent 3 hours chopping ingredients that eventually made 6 pints of homemade salsa and decided that I think I will wait until it is BOGO at Publix and spare myself the hassle.
Salads: I am obsessed with making fresh salads during the summer. This little number was my son's creation: Spinach, quinoa, black beans, craisins, tomato, avocado, and feta with a light basalmic dressing. Try it, I promise you will wonder how you ever lived your life without it.
Stroller: Celia got this AMAZING special needs stroller. This is the "before" shot. We had not received the inserts that give her the support she needs. Still, it has lots of room and it weighs only 22lbs, so it is super-easy to get in and out of my truck. Since her wheelchair weighs over 60lbs and has to be lifted while simultaneously turning it on it's side and sliding it in the back of the car, my achin' back is so happy for this little number.
After: You can see how much support those inserts give her.I actually think she has more support in it that she does in her wheelchair. SCORE! Another little bonus is that the foot rest rises so we can put her ipad on it, and she can play games with her feet. The day her inserts came, she was SO HAPPY, she sat in the foyer playing with her ipad and didn't want to come out.
To give you an idea of how much room it has, Aria is 8 and still has head room to grow. I think it holds up to 90lbs, which Celia will be when she is 27, so I don't think we will max out the weight capacity. I would guess she will fit into it until she is at least 10-12 years old, if we don't kill it from overuse before then. HA!
Juicy and Delicious:I love it when they are giggly and twinny. Edible.
More Homemade: I found a homemade moon sand recipe on Pinterest. Side note: Who ever lived without Pinterest?!? My world is more creative, and organized because of that nifty little website.
The girls had their own bins and played for hours on the deck while I canned copious amounts of peaches. Win/Win.
School: And then it became stifling hot, literally overnight. When the doorbell rang delivering the girls curriculum, they were so excited they BEGGED me to start that very day. How could I deny these girls their scholarly request?!? Here are my 4th and 1st grade girlies on their first day. And before you feel too sorry for them, we finished school at the end of April and planned to go back next week anyway. July is too hot a month for my special needs girls, so we take our time off in the spring and fall when we can all enjoy the weather. The beauty of homeschooling, folks.
More Canning: I'm trying to think of a way to bottle up these little rays of sunshine.
Maybe I should check Pinterest for ideas on how to do just that. HA!

We LOVE the new stroller!!! It looks roomy and just perfect for Celia. Is Sofia o.k. not riding with her twin? Have you noticed that Gianna looks like a chef? Or is it just her affection for hats? We may have to put a brick on Aria's head to keep her from growing up so fast. Where does all the time go.
ReplyDeleteI think I need to move out to where you live. I love canning, but haven't had much opportunity to do it since having a home with enough room to store more than the jams I do each year.
ReplyDeleteI LOVE the stroller. Mine is due to arrive in two days!!! I'm going for a test run that night down the beach. I can't wait to post pictures of my nugget in it. She'll fit it until she's 27, too!
Love the happy pictures, and now I'm hungry. I may have to come sneak down and steal some of that peach/onion relish...
ReplyDeleteMy younger girls are in year around school and I do like it a lot. But wish there was more things to do when they are off school because they miss a lot of the activities...
